3 Cups raisins

Boiling water

1/2 Cup packed brown sugar

1/4 Cup butter, softened

1 Cup cornmeal

1/2 Cup molasses

1 egg

2 Cups buttermilk

3 Cups flour

2 teaspoons baking soda 

Directions: 

Heat oven to 350 degrees. Grease and flour bottoms only of 2 one quart casseroles. 

In small bowl, cover raisins with boiling water. Let stand for 5 minutes, then drain. 

In large bowl, cream brown sugar and butter until light and fluffy. Add cornmeal, molasses, egg, buttermilk and mix well. 

Lightly spoon flour into measuring Cup, then level off. Stir in flour and baking soda. Fold in raisins. Pour batter into prepared casseroles. 

Bake at 350 for 40 to 50 minutes or until toothpick comes out clean. Cool for 10 minutes, then remove from pans. 

Store in frigerator.
