Help. My son (age6) is begging me to make broccoli soup without cheese. Anyone have a tasty version to share? Thanks.

    • Smokey Broccoli Cauliflower and Cheddar Cheese Soup

      8 slices smokey bacon, chopped
      • 2 tbsp unsalted butter
      • 1 onion, finely chopped
      • 2 tbsp all-purpose flour
      …• 3 cups milk
      • 2 cups chicken or vegetable stock
      • 1/2 tsp salt
      • Pinch cayenne pepper
      • 12 oz red-skinned potatoes (about 3 medium), cut into 1/2-inch dice
      • 2 cups shredded Cheddar cheese, tossed with 1 tbsp all-purpose flour
      • 1 tsp hot pepper sauce (optional)
      • 2 cups each of chopped broccoli and cauliflower

      Directions
      1. In a large pot, saute bacon over medium heat until browned and crispy, about 5 minutes. Remove with a slotted spoon to a plate lined with paper towels. Set aside.

      2. Pour off all but 2 tbsp of the fat in the pot. Add butter and heat until melted. Add onion and saute until softened, about 6 minutes. Sprinkle with flour and saute for 2 minutes.

      3. Gradually whisk in milk, stock, salt and cayenne; bring to a simmer, stirring often. Simmer, stirring often, until smooth and creamy, about 3 minutes. Do not let boil. Add potatoes, broccoli and cauliflower reduce heat and simmer, stirring often, until tender, about 20 minutes.

      4. Puree in batches then add back to the pot.

      5.. Add cheese, 1/2 cup at a time, stirring with a wooden spoon after each addition until cheese is melted. Do not let boil. Add hot pepper sauce (if using). Taste and adjust seasoning with salt and cayenne, if necessary.

      6. Ladle into heated bowls and garnish with reserved bacon.

      Nancy Josland Dalsin I just noticed that is says “without” cheese. You can omit that part.
    • Karen Dotzel Your recipe sounds delicious and I will have to try it for me but my son insists on no cheese!!

    • Nancy Josland Dalsin You can use this recipe, but just skip the cheese and hot sauce and maybe add a few splashes of Worcestershire sauce instead.

    • Serena Adkins Ellison you could experiment and just make your own….id start with an easy broth water and a chopped large onion salt pepper and a beef or chicken bullion cube if your using no meat…if you ARE using meat a chicken makes a beautiful broth..(u can even leave chicken in or take out for another use if u dont want the chicken in the soup) .boil till full flavored add tons brocoli salt pepper again and you have broc and onion soup….this is just how I would start off experimenting…

    • Serena Adkins Ellison yeah…. with onions and water.. salt pepper.. stick of butter can of evaporated milk..chopped up celery and some broccoli would be quite nice wouldn’t it?
