BRENDA JOHNSON’S CHICKEN SALAD
Comments from Brenda on Tried and True Recipes on Facebook – I am just an old country girl don’t measure much. This is the Ingredients for the chicken salad now I am guessing this for a small amount last night I made 10 lbs of chicken. 4 chicken breast, 1/2 cup diced celery, I cup grapes( I like the seedless black- but have used others and even mixed different kinds) sliced, can crushed pineapple drained, small can mandarin orange drained, 1/2 chopped pecans, 8 oz. cream cheese softened, Hellmann mayonnaise. You can trio by looking if you need more grapes, etc.
3 cooked chicken breasts
1 c white grapes sliced
1/2 c celery diced
1 can crushed pineapple drained
small mandarin Oranges, drained
1/2 c pecans chopped
Apples or other fruit chopped (optional)
8 oz cream cheese softened
Hellman’s Mayonnaise
Mix together all ingredients with Hellmann’s Mayo. Use as much Mayo as needed for the desired consistency.

Brenda Ronnie Johnson I also add cream cheese too and sometimes well drained crushed pineapple. The cream cheese gives it a extra good taste.

Brenda Ronnie Johnson That is sad. So many things call for pineapple. I don’t put the pineapple in every time but if I have any on hand I usually do. I make different chicken salad too. I want to try the one with the Cajun spices too that you posted. My daughters like the fruit and nut one the best.

Brenda Ronnie Johnson Yes I still use mayo too. I put cream cheese in while the chicken is still warm. It is really good. You will like it.

Lynn McGinnis Anytime i add cream cheese to a recipe that also has mayo in it, I always let the cream cheese get to room temp and mix it well with the mayo. That way it gets spread all through the recipe and you don’t have the lumps that it sometimes causes when its still cold & you try to mix it in.
