BLACK WALNUT CAKE WITH CREAM CHEESE FROSTING

1/2 cup soft butter

1/2 cup shortening

2 cups sugar

5 eggs separated

1 cup buttermilk

1 tsp baking soda

2 cups all purpose flour

1 tsp vanilla

1 1/2 cup chopped black walnuts

1 (3oz. can) flaked coconut

1/2 tsp cram of tarter

Raisins

Chopped black walnuts for garnishing top

CREAM CHEESE FROSTING

1 (8oz) pkg cream cheese, softened

1/2 cup butter or margarine, softened

1 (16 oz pkg) Powdered sugar

1 tsp vanilla

Combine cream cheese and butter and cream together till smooth. Add in powdered sugar beat until fluffy and add in vanilla.

For Cake

Cream butter and shortening , gradually add in sugar beating till light and fluffy. add egg yolks beating well. Combine buttermilk and baking soda, stir till soda dissolves

add flour to creamed mixture alternately with buttermilk. beginning and ending with flour.

Stir in vanilla. Add in walnuts and coconut

still well.

beat egg whites (at room temp) with cream of tarter until stiff peaks form

fold egg whites into batter. Pour batter into 3 greased and floured 9 inch round pans

bake at 350 for 30 minutes Remove from pans and cool completely

Frost cakes with cream cheese frosting and sprinkle remaining walnuts on top of cake for garnish
