1 (5-oz) package saffron rice mix

1 (15-oz) black beans

3 Tbsp fresh lime juice

1 tsp chili powder

1/2 tsp ground cumin

2 Tbsp chopped fresh cilantro, divided

Garnish: sour cream, sliced green onions

Prepare rice according to package directions; keep warm.

Drain beans, reserving 2 Tbsp liquid. Combine beans, reserved liquid, lime juice, chili powder, and cumin in a saucepan. Cook over medium heat until thoroughly heated; stir in 1 Tbsp cilantro. Serve beans over rice, and sprinkle with remaining 1 Tbsp cilantro. Garnish w/ sour cream and green onions, if desired.
