Berry Spring Pie

3 cups assorted berries ( I use black berries, strawberries,raspberries or blueberries)

1 prepared graham cracker crumb or shortbread crumb crust ( 6 ounces or 9 inches)

1 and a half cups orange juice

half cup of sugar

2 tablespoons cornstarch

1 package ( 4 serving size ) Jello-O Brand Gelatin, any red flavor you like

Thawed cool whip whipped topping ( optional ) 

 

Arrange berries in bottom of crust

MIX- juice, sugar, & cornstarch in medium saucepan over medium heat. Cook on medium heat, stirring constantly, until mixture comes to a boil; boil 1 minute. Remove from heat. Stir in gelatin until completely dissolved. Cool to room temperature. Pour over berries in crust.

Refrigerate 3 hours or until firm. Garnish with Whipped Topping if desired. Store left over pie in refrigerator.
