Get a COMPLETELY defrosted Whole Chicken. Rinse with water and pat dry. If expecting a LOT of company then do get one or two more chickens..

 

 

 

 

put in bowl and start your rub

 

 

… you can use whatever spices you like but this is what I do…

 

 

Rub whole chicken with butter.

Take remaining butter (1/2 stick) and put up cavity.

Rub chicken all over with about a palm full give or take (1/2 tsp) of Paprika.. then Crushed Red Pepper Flakes… then Thyme…. then shake Parsley Flakes over chicken and salt and pepper…Take a half of a small onion and cut into large chunks, place in cavity with about 4 peeled cloves of garlic. and lastly squirt some Zesty Italian Dressing over chicken and rub over every part… at this point you can take a can of beer and open… pour half out… then poke more holes in top… place tightly up chickens cavity…. you can set it in a wire can holder they make JUST FOR this recipe (get it at Dollar General or Magic Mart) or if you don’t have one simply put aluminum foil on the tips of each leg and make a point at ends to help steady the chicken on grill grates.. sort of like a tripod effect… it works just fine….

Have grill heated already to 380 to 400 around that area…. and if you have a three burner grill turn off middle burner and place chicken there… always place chickens in indirect heat… at end of cooking take some BBQ sauce if you like and lightly baste the outside of chicken….we like it both ways… cook them slow… about 2 hours will do it when you think it looks done… insert temp and make sure it reads 180 degrees…

PS they always look different… according to your rub you use or even what kind of grill you use… I have one pic on here where my bro in law done one on his smoker grill and his came out looking BLACK but it was DELICIOUS inside… so moist not a burnt taste at all to it…
