My dinner, Beef and bean burrito’s and mexican rice:
Beef and Bean Burrito’s 

– 1 pound of ground beef
– 1 medium onion
– 1 clove of garlic
– 2 teasp chili powder
– 1 teasp dried oregano
– ½ teasp cumin
– ½ teasp salt
– ¼ teasp pepper
– 1 can refried beans
– 1 can enchilada sauce

-> brown meat, onion and garlic
– drain -> add seasoning
– simmer for 5 min
– add refried beans and half of a can of enchilada sauce
simmer for 10 min
-Put mixture in tortilla, and pour some enchilada sauce over it, pour some cheddar cheese over it

Mexican Rice

– 2 cups of rice
– 2 tablespoons vegetable oil
– 3 cups chicken broth
– ½ onion
– 1 poblano pepper (or green bell pepper)
– 1 jalapeno
– 1 roma tomato
– 2 cubes chicken bouillon Knorr
– salt, pepper, 1 teaspoon cumin, cilantro, 2 cloves of garlic

– cook rice in oil (3min) med heat
– add chicken broth >> bring to boil
– add all vegetables (cut in small pieces) and seasoning
30 min low heat
