BACON & CHEDDAR ZUCCHINI BREAD

3 eggs

1 Tbsp Sugar

1/2 cup oil

1/2 cup zucchini (1 cup shredded)

1 cup cooked chopped bacon , cooled

1 cup grated cheddar cheese

6 Tbsp Milk

1 1/2 cup flour

1/2 tsp baking soda

1/2 tsp baking powder

pinch salt

1 tsp black pepper

In a mixer add eggs sugar and oil. Mix 5 minutes.

Switch off mixer and using a wooden spoon add the zucchini , bacon and cheese. Combine well then add 6 Tbsp milk.

In a separate bowl mix flour, baking soda, salt, powder, and pepper

add slowly to the wet mix, combine well.

Pour the batter into a greased 8×8 baking dish or pan and bake at 325 30-35 minutes. Test with toothpick to check if center is cooked.
