Aunt Shelia’s Coconut Black Walnut Pound Cake

 

2 c sugar

1 c chopped black walnuts

4 eggs beaten

1 c salad oil

1/2 tsp salt

3 c all purpose flour

1/2 tsp soda

1 c buttermilk

1/2 tsp b powder

1 c flaked coconut

2 tsp coconut extract

 

Combine sugar salad oil and well beat eggs combine dry ingredients mix well add to sugar mixture alternately with buttermilk beating well stir in nuts coconut flavoring. Pour batter into pre floured and greased 10 inch bunt tube bake at 325 for 1 hr 5 min or till cake tests done with toothpick pour hot coconut syrup over cake allow cake to remain in pan4 hrs to absorb syrup then wrap well cake will be very moist

 

Coconut Syrup-

1 c sugar

2 tbsp butter

1/2 c water

1 tsp coconut extract

Combine sugar water and butter in saucepan bring to boil;

boil 5 min remove from heat stir in flavoring

yields 3/4 c

pour over cake
