APPLE ROLL

3 Eggs
2/3 Cup Applesauce
1 Cup Sugar
1/2 Tsp. Cinnamon
3/4 Cup Flour

Mix all ingredients together, grease and flour bottom and sides of cookie sheet & pour into cookie sheet. Bake at 350° for 15 minutes or until golden brown.

Spread (CLEAN) kitchen towel on counter and cover with powdered sugar, make sure all sides and middle of apple roll are free and place upside down onto towel. Put powdered sugar on top side of roll and roll up into the towel. Place in freezer for 15 – 20 minutes to cool. 

Filling:

1 Tbsp. Butter
8 Oz. Cream Cheese
1/4 Tsp. Almond Extract
1 Cup Powdered Sugar

Beat all ingredients together until fluffy. Spread onto cooled roll from about 1/2 inch on all sides.

Roll up (without towel) and refrigerate for at least 1 hour.

I usually wrap mine in aluminum foil to keep it fresh.
