1 c. flour, sifted

1 c. old fashioned oatmeal

1/4 c. dark brown sugar

4 tsp. baking powder

3/4 tsp. cinnamon

3/4 tsp. salt

1 c. milk

1/3 c. (5 1/2 tbsp.) butter, melted

1 egg, slightly beaten

1 c. (1 med.) unpeeled apple, finely chopped

1 1/4 c. (5 oz.) Jersey Jack cheese, shredded

In large bowl mix together flour, oatmeal, brown sugar, baking powder, cinnamon and salt. Combine milk, butter and egg; stir into dry ingredients until just moistened. Fold in apple and cheese. Fill buttered muffin cups 2/3 full. Bake at 400 degrees for 15-20 minutes until golden brown. Yields 12-15 muffins.
