AMISH CINNAMON BREAD (CAKE)
Makes 2 loaves or one 9×13 cake
AMISH CINN BREAD… CAKE to Me
Normally you start with a “start” given to you by a friend, thus friendship bread. But to start it yourself you take:
1 cup flour
1 cup milk
1 cup sugar
Rules you need to know before starting. Do not refrigerate “starts”. If air gets into bag let it out. It is normal for batter to thicken, bubble and ferment. Do NOT use metal spoons or bowls.

day 1…. …….do nothing
day 2 ………..mush the bag
day 3…………mush the bag
day 4…………mush the bag
day 5 ……….. mush the bag
day 6….. Add to the bag 1c. flour 1c sugar, 1c milk, Mush the bag
day 7 mush the bag
day 9 mush the bag
day 10 FOLLOW THE DIRECTIONS
1 Pour entire contents of bag in non metal bowl
2. Add 1 1/2c flour, 1 1/2c sugar, and 1 1/2 c milk, MIX WELL.
3. Label 4 One Gallon ziploc bags with day 1 and date, fill each of these 4 bags with 1 c batter. These are your starter bags to share with friends.
4. Preheat oven to 325
5. To remaining batter add:
3 eggs
1 c oil
1/2 c applesauce
1/2 c milk
1 c sugar
2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 c flour
1 lg box of instant vanilla pudding
Nuts (optional)
Raisins (optional)
(I have even added a bit of coconut too
and if I have pineapple bits I drain and have been known to add as well…. not called for in the recipe though) =)
6. Mix together in a separate bowl, 1/2 c sugar & 1 1/2 tsp cinnamon SET ASIDE…
7. Grease bottom and side of 2 loaf pans or a 9×13 pan and DUST with 1/2 bowl of sugar-cinn mixture.
8. Pour batter evenly into the 2 pans
and sprinkle the remaining sugar-cinn mixture over top of batter…. VERY IMPORTANT
9. Bake about 1 hour or until toothpick comes out clean, but will be a moist cake… cool and enjoy

A. you could make Banana bread with the starter
AMISH FRIENDSHIP STARTER
1 c. sugar
1 c. milk
1 c. flour
Combine ingredients in a large glass or plastic container, cover lightly (leave lid slightly a jar).
Store at room temperature; do not refrigerate.
Stir every day for 17 days using a wooden spoon.
On day 18 do nothing.
On days 19, 20 and 21 stir with a wooden spoon.
On day 22 add 1 cup flour, 1 cup sugar and 1 cup milk. Stir again.
On days 23, 24 and 25 and 26 stir again.
On day 27 add 1 cup flour, 1 cup milk and 1 cup sugar.
You should have 4 cups of starter. keep two cups for yourself and give a cup to two friends.
