BROWNIE POPS
Ingredients:
Brownie Recipe (see below) or your favorite recipe or boxed.
3 cups chocolate chips (real chocolate, not semi-sweet)
3/4 block of paraffin wax
Assorted decorating sprinkles
Lollipop sticks

First, melt chocolate chips and paraffin wax in a small crockpot on medium to high while brownies are being made and while baking.
Directions for Fudgy Chocolate Brownies:
Ingredients:
1/2 cup butter
3 ounces unsweetened chocolate squares
1 cup sugar
2 eggs
1 teaspoon vanilla
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/2 cup chopped pecans
1. Preheat oven to 350 F. In a medium saucepan melt butter and unsweetened chocolate squares over low heat, stirring constantly. Remove from heat and allow to cool.
2. Grease an 8 x 8 x 2-inch baking pan; set aside. Stir sugar into cooled chocolate mixture in saucepan. Add the eggs, one at a time, beating with a wooden spoon just until combined. Stir in vanilla.
3. In a small bowl stir together the flour and baking soda. Add flour mixture to chocolate mixture; stir just until combined. If desired, stir in nuts. Spread the batter into prepared pan.
4. Bake for 30 minutes for 8-inch pan or 25 minutes for 9-inch pan. Cool in pan on a wire rack.
5. After brownies have cooled a little, scoop out enough dough to make a ball about the size of a walnut.
6. Insert the lollipop stick into the brownie ball. (Brownie balls are easier to dip if frozen first, the will stay on the stick easier when dipping).
7. Dip each brownie ball on the stick into the chocolate and coat evenly. If you have a ball fall off the stick, just scoop it out with a spoon and re-insert and re-dip.
8. Sprinkle with your sprinkles of choice, decorate anyway you prefer.
9. Place brownie lollipop on a sheet of foil and allow to cool and harden.
10. Brownie pops can be frozen and take out of freezer as needed.
* left over dipping chocolate can be frozen to use another time).
***Be careful when dipping the brownies on the stick, the chocolate gets really hot. Once all the chocolate and paraffin melt, turn it to med or low. If it starts to thicken up, give it a stir and turn to high again…you can adjust the crockpot as you dip. I don’t find this happens usually until I get closer to the end of the dipping…when the chocolate in the crockpot gets low. Another point is, put all your sprinkles in little bowls, and when you put sprinkle them on the pop, the extra sprinkles will fall back into the bowl, that way you won’t waste as much. Make sure your chocolate has most of the dripping stopped before you hold over the bowl or you’ll end up with a lot of chocolate in your sprinkles. Once you do a few, you’ll find what works best for you…there are on real guidelines other than be careful around the hot crockpot! lol Kids really do enjoy these, along with cake pops.
