BEEF BARLEY SOUP

This delicious old fashioned soup will be sure to wake up your taste buds and keep you warm on a cold night. 

2 pounds of cut up beef.

vegetable oil or butter

7 cups water

2 -4 beef bullion cubes

1 16 ounce can stewed tomatoes

1 large onion chopped

thinly chopped celery, 3 stalks

chopped carrots 2

2 Minced Garlic Cloves

half of green bell pepper chopped very small  or can omit if desire

Dried Parsley

Salt

lots of black Pepper

Tsp Basil

1/2 tsp Worcestershire Sauce

2/3 cups instant barley

(Can do this soup in a stock  pot on stove all at once  or in crock pot.. I like to do this  soup in the crock pot over night on a cold day and turn to warm and go to work the next day, come home and finish my soup by turning to high and  adding my barley  and soon as it is tender I can serve)

Start by Browning  the beef in oil or butter  with chopped onion and garlic.

Stir in Water, Seasonings,  tomatoes, bullion cubes, and celery  and carrots

simmer for 1 1/2 hours. ( 0r put on low in crock pot)

Add in 3/4 c instant barley last after soup has simmered and beef is melt in your mouth tender, .


Simmer until desired tenderness of barley.
