1 cup all purpose flour

4 packets (0.6 oz each) roasted garlic dressing mix (Good Seasons) (optional)

2 medium sweet potatoes

2 large red skin potatoes

Veg oil for deep frying

salt pepper

in large resealable plastic bag combine flour and dressing mix or your choice of seasonings

Rinse potatoes and pat dry with paper towels

Using mandoline slicer, thinly slice potatoes into round disks

starting with sweet potatoes add about half the slices to the seasoned flour. Seal bag and shake. Arrange slices on baking sheet: repeat with remaining potaotes. Chill seasoned potatoes about 20 minutes,

In large heavy bottomed Dutch oven heat enough oil to rise a little less than halfway up the sides of the pot, heat oil to 375 degrees F. Fry potato slices in small batches until crisp. Remove with slotted spoon and drain on paper towels,

Season to taste with salt and pepper.

Repeat until all chips are done. Enjoy!
