1 pkg. Pillsbury Plus Lemon Cake Mix

3 eggs

1/3 dup cooking oil

1 cup water 

FILLING 

8-oz pkg. cream cheese, softened

1/4 dup sugar

1 tsp. lemon juice

2 tsp. water

1/2 cup coconut 

GLAZE 

1 cup powdered sugar

1 Tbs. lemon juice

1 Tbs. butter, softened

1-2 Tbs. milk 

Preheat oven to 350 degrees. Grease and flour 12-cup fluted tube pan. In large bowl, blend first four ingredients until moistened. Beat 2 minutes at highest speed. Pour into prepared pan. In small bowl, blend all filling ingredients until smooth. Spoon filling over batter in pan without touching sides of pan. Bake 40-50 minutes until toothpick inserted in center comes out clean. Cool upright in pan 25 minutes; turn onto serving plate. Cool completely. Blend glaze ingredients in small bowl until smooth. If needed, add a few more drops of milk to make glaze consistency. Spoon over cooled cake. Refrigerate any leftovers. 

Make sure to cool in pan as directed. Very moist and wonderful!
