MOM’S DROP BISCUITS

(Some people call these Cathead biscuits but mom and grandma never did they called them drop biscuits) 

First before any sort of gravy I make my drop biscuits so they will be almost ready when the gravy is ready. You will need: ( Self rising flour, tad sugar, tad oil,  tap water (can use milk or buttermilk) mix lightly with fork till ingredients come together, adding oil last and adding more flour if needed as you go along.

Preheat oven to 450 degrees

Put 8 inch cast iron skillet in oven with couple tbsp of butter to get hot.  Take out carefully once butter is melted. Shape your biscuits (we do it by hand, you can cut them out if you want) Place biscuit in butter and turn over so both sides are buttered, repeat until all the biscuits are in pan. Put in oven and bake .. sorry I dont set the timer..once they look ready I brown the tops and take it out. Meanwhile I already made my gravy.

CHOCOLATE GRAVY 

Ingredients for the Chocolate Gravy:

large Tab of butter

tad bit of vegetable oil

4 big Tbsp cup cocoa powder

about 3 tbsp self rising flour

milk 2 cups

1 cup white sugar (may need to add a tbsp or two later if needed)

cup of water, set to the side to thin down as needed.

In a 10 inch cast iron skillet I added first a tab of butter.

I mix my flour and cocoa powder together in a bowl very well with a fork.

Have your  whisk, milk,  and sugar and water sitting to the side and ready to go as this recipe goes fast and you do not want to burn your chocolate.

once butter melts, add a little oil to the pan. Add the flour and cocoa mixture. and using a wooden spoon work it into the moisture, heat should be on medium heat.

Be careful you are NOT making a roux, you are simply incorporating the wet and dry best you can. Careful not to let it burn. Add in the milk slowly as you whisk over medium heat.. you can now start to whisk in the sugar. it will begin to thicken and bubble up.. you may need to add tiny bits of water as you whisk it as smooth as you can get it. Taste to see if it has the right chocolate sugar ratio and thickness.

Split your biscuits in half and cut up a ripe banana beside it if you have it.

Ladle some hot chocolate over top of your biscuit while warm.
