2 TBS butter

1/2 cup chopped onion

3 cups coarsely chopped cauliflower

1-10 ounce can of vegetable broth

1/4 cup all purpose flour

…2 1/2 cups of milk

1 1/2 cup shredded sharp cheddar cheese salt and pepper to taste 

 

chives, parsley or croutons for garnish

Melt butter in large saucepan. Saute onion until tender. Stir in cauliflower and broth. Bring to boil, cover, reduce heat and simmer 15 to 20 minutes until Cauliflower is tender. Combine flour and milk. Add the mixture to the saucepan. Cook and stir until mixture thickens. Remove from heat. Add cheese and stir until melted. Add salt and pepper to taste

Garnish with chives, parsley or croutons
