Serena’s Pear Butter in a crock pot

NOTE: (can do the same thing on stove top but you have to stand over it the whole time, Crock pot takes longer but I like the fact I can do other things and let it cook and smell up the house in that wonderful smell)

Start out with:

4 Tbsp of water in bottom of crock..

you will need a crock pot full of pears that have been  peeled sliced and the seeds and stem removed.

then you will put a tab of butter in the crock pot and  a splash of lemon juice (optional on the lemon juice)

Now you want to pour some White Corn Syrup over top the pears and put on the lid.. put the crock on high and leave it alone… come back to occasionally stir paying attention to the bottom and sides as it cooks down.. make sure it doesn’t stick

Now it should start to cook down.. add a LOT of sugar.. I don’t measure do to taste.. at least  5 cups or more..

and turn down to low.. stir  frequently and take lid off to let draw out some of the water as it cooks over night


 

NOTE: (some pears are WAY more juicier than others so IF yours are super juicy and watery do this. but if not do NOT do this next step) Take some of the pear juice out with a ladle and put into a cup then add two tbsp cornstarch and stir with fork… pour into the pear butter and stir..

(Also 1 quart of homemade chunky cinn applesauce added to the pear butter makes for an amazing addition to the pear butter but ONLY OPTIONAL on that too… )

 

So now your pear butter that is cooking with top off on low should look like this, at this point.

Once it is thick enough that it hangs onto the spoon it is ready for the next step

Now get out your food mill if you have one and a large pot..  Then do it again, or mash through a sieve to make SURE you get out all the hard parts of the pear or I am telling you the taste will be delicious but the texture will be terrible and grainy like little rocks here and there.. you want that OUT of your pear butter!!!!  you want it smooth!!! you can also avoid this when your cutting up your pears if you get out all of the core and seeds ect……

once completely smooth.. pack into hot pint jars Makes 5 pints with a little left over I usually put the leftover in a jelly jar and put in the fridge

now wipe down rims and put on lids and rings.. and water bath for 30 minutes

DONE.. make sure you label it Pear butter cause it looks a lot like apple butter but the taste is definitely pear
