I’m always ask to bring my pineapple pie everywhere I go:
Mix together one box creme cheese w 1 c sugar.
Mix in 1 Lg can crushed drained pineapple
Add 1/2 package of dry instant vanilla pudding mix
Stir in 1 Lg container of cool whip
Pour into 2 Graham cracker pie shells and chill 1 hour.

Recipe was wonderful.. very light and refreshing for a summer day.. my mom made them exactly like Carole had written in the recipe only changes she made was she garnished the top with some pineapple chunks.. lovely recipe.. thank you Carole
