Well I never really  WROTE Down this recipe cause it was so simple. simplest and fastest was always macaroni.. canned tomatoes salt and pepper and a taste of sugar served with corn bread. sometimes browned hamburger in it as well if you have it.. this is a dish you can make all kinds of variations on ..  Mom and granny and Pauls mom makes it more than I do..  but after a long discussion on my facebook recipe group TRIED AND TRUE RECIPES.. on this very subject and how we all make it somewhat different.. I thought I would just post the  comments and let you read them…. you can REPLY and write  how YOU make it.. we would love to hear them.. Serena

 

Macaroni and tomato recipe????

Ellen Booth Combs You can’t beat mac-n-cheese with canned, diced tomatoes (warmed in microwave first) mixed in at the finish!!! My favorite since childhood!!! Yummy………….:)

When I was a child, my mom would cook mac & drain, then add canned tomatoes, and fried bacon/onions pieces… probably a little sugar for taste, then simmer together for awhile to let flavors blend. :o) Makes my mouth water, just to think about it~ lol

  • Amy Townsell Carol, I don’t know how everyone else makes them and Serena probably has a recipe on here. But I just boil my elbow macaroni until they are done (when tender). Add tomato juice, Hunt’s petite diced tomatoes (or better yet, home-grown canned tomatoes), a little water to get your consistency right, a little bit of sugar, salt and pepper (to taste). Sometimes I sneak in a drop or two of vinegar. They are yummy! The next day they won’t be as juicy. Some of the juice will soak up – you can always add more tomato juice. Fix a big pone of cornbread to go with it and crumble some up in your plate or bowl… Make you wanna smack your mama!!! I’m an old-fashioned cook, so when I learn how to make something I don’t follow a recipe, so it makes it hard to tell measurements… 😀

    Yes, I forgot the onions… I put onions in mine, too…. And yes, here in Kentucky, you put sugar and/or bacon grease in EVERYTHING!!! lolololol!‎(not really, but just about!) ha ha

      Me too.. ha ha…. and if I don’t, I get accused of it! LOL! The whole family is like, “You put sugar in EVERYTHING!” I say, “Not EVERYTHING.” But I do put it in a lot of stuff. Some of it you can’t really tell, but it does make a difference in the taste.

      I know – the first time someone told me I should add it to spaghetti sauce (!) to cut the acidity, I thought they were crazy!!

      I put it in my spaghetti/lasagna sauce, chili, vegetable soup, mashed potatoes (yes, and they are the bomb!)… and more…….cornbread….

      Mashed potatoes?? (How much?) LOL – I’ll try it. Yeah, I put it in cornbread, too!

      Just depends on how much you have made. I have to make enough to feed an army, so you might just start out with a pinch or two, mix it up, taste it, see if it needs more salt or what have you….. start slowly and add it little by little until you get it to just the right taste. Got this from my grandmother and she makes the best mashed potatoes you will ever put in your mouth.

      You want to make sure and not add too much, because if it’s too sweet it won’t taste right. Just the right balance is when a person can taste them and never know you added sugar.

      OK – but I make enough for an army even if’s it just me and hubby! The 2 of us usually finish off ANY recipe that says “Serves 6 or more!” LOL (Thank God for good metabolisms!!)

    • Serena Adkins Ellison I agree with ya’ll mom and grandma always made it so many ways but the simplest and fastest was always macaroni.. canned tomatoes salt and pepper and a taste of sugar served like Ames said with corn bread… but you can make mac an tomato casserole …. sooo many variations. but they all started out with simple mac and tomatoes salt sugar and pepper.. from there you can create your masterpiece hee hee
      Here is a few diff pics of how many simple changes you can make to this dish….
      Most Common.. is just that… Macaroni and Canned tomatoes with salt pepper a tiny tit of butter and sugar (or not)
      Next Variation is make like above but only add a pound of cooked, drained hamburger (ground chuck)  to it
      You can NOW go a step further and add to Variation #2
      a can of tomato juice
