makes about 4 cups

3 1/2 pounds apples peeled cored and sliced

2 cups granulated sugar

1 cup brown sugar

2 tsp cinnnamon

Pretreat apples by dipping in lemon juice or pre treat solution, in large bowl combine sugars and cinn. Drain apples. Toss apples in sugar mixture. Dry at 130 F for 21 hours or until pliable. NOTE apples must be turned halfway through the drying process.
