Sea Foam is traditionally made over a Vanilla Cake…… BUT… it tastes AWESOME over Chocolate Cake as well

SEA FOAM ICING

4 beaten egg whites
water to mix
1 Box light brown sugar
Tsp Vanilla

Take brown sugar and add water in till liquefied.

Put in saucepan and let boil.

Keep taking spoon up in the air until it makes a “HAIR STRING” Take off Heat. (NOTE- Stir constantly easy to burn) make sure it is not grainy

Take egg whites beat up good till stiff

. Pour sugar mixture over into egg whites SLOWLY all the while using Electric mixer with other hand. Use mixer the whole time, Take Vanilla and add, Continue to beat till thick and foamy.

Pour over yellow cake mix. ( I think choc is good too but it is traditionally yellow cake that is paired with this icing)

RESULTS are smashing….

you SHOULD have leftover icing.. if you do.. here is what I do with them .. I make

SEA FOAM CANDY it is a lot like a fancy marshmallow.. Just drop balls onto waxed paper on cookie sheet and let set over night.. will come out like I said.. a lot like a marshmallowy texture… kids love em.. so do I. =)
