2-4 Boneless, Skin-on Chicken Breasts

1 Red Onion

1 Lemon

Fresh Thyme

Fresh Ground Pepper 

 

1. Slice lemon into thin rounds. Slice onion into thin wedges. Remove thyme leaves from stem.

2. Peel back the skin of the chicken breasts. Layer ingredients on in this order: fresh thyme, fresh ground pepper, onion slices, 1-2 lemon rounds per half breast.

3. Bake covered in oven preheated to 350° for 20 minutes. Cover after 20 minutes and cook another 20-30 minutes uncovered until slightly browned.

4. Serve with skin removed (and lemon removed if desired).
