4 chicken breasts

4 Tbsp olive oil

1 lb mushrooms

1 red pepper, sliced

1 yellow pepper, sliced

3 limes, juiced

1 cup fresh cilantro

16 oz linguini pasta 

 

1. Cut chicken into cubes. Heat oil in large non-stick skillet. Add chicken and saute on med-high until cooked through. Add the mushrooms and peppers. Stir in lime juice and cilantro. Cook until vegetables are tender. Serve over pasta.
