Boiled- Select active live lobsters plunge head first into boiling salted water to cover. Bring back to boiling; reduce heat, simmer 20 min. remove at once. With sharp knife cut in half lengthwise. Discard craw or crop near head, and remove black vein that runs to tip of tail. Crack claws. Serve Lobster as main course- hot with butter or split and chilled with mayo. Or remove meat for hot creamy casseroles and salads.

Broiled- Place Lobster on its back Kill by cutting spinal cord between body and tail shells. With sharp knife split in half lengthwise. Discard Craw or crop near head; Remove black vein that runs to tail. Leave in green fat and red coral. Flatten lobsters open on broiler pan. Brush with melted butter; season. Broil (a 1 lb lobster takes 12-15 min) serves with melted butter.
