1 small chicken (a fryer, 2-3 lbs.)or 4 large chicken leg quarters

1 cup Bisquick

1 Tablespoon garlic salt

1 teaspoon pepper

one small cast iron dutch oven, big enough to fit chicken.

Directions:

Preheat oven to 475 degrees.

Place chicken (rinsed and dried) in a sturdy paper or plastic bag with Bisquick, garlic salt and pepper. Shake it around until evenly coated.

Spray dutch oven with non-stick cooking spray. Remove from bag. Place chicken in dutch oven.

Roast in oven one hour.
