RECIPE AND PHOTO SUBMITTED BY Rosetta Sperring or ROSETTA’S SWEET TREATS http://rosettassweettreats.wordpress.com/2012/04/29/easy-neapolitan-layer-cakes/
I know I’ve posted a couple Neapolitin cakes before, one a regular cake (scratch) and a bundt cake….but here are 11 cakes (I think) that I made Neapolitin using Duncan Hines French Vanilla cake mix (my go-to-cake mix)!! No one has ever thought these cakes were from a box…this cake mix is the best! Anyway, I just show different ways you can decorate a cake, using the same cake mix. Who says you can’t use a boxed cake mix to make a cake…not all great cakes are scratch! http://wp.me/p1ISET-A2

Ingredients:
1 box Duncan Hines French Vanilla cake mix
1 Tablespoon Instant Coffee
1 teaspoon strawberry extract
Pink food coloring (I use Wilton gel food coloring)
Assorted sprinkles and decorations
Icing:  Links Below:
Directions:

In a large mixing bowl, combine the cake mix, milk, oil and eggs.  Beat on medium speed for 2 minutes.  Divide batter into three even portions. You can use an ice-cream scoop to make sure each bowl is equal.

Coat three  8″ pans with shortening and flour.  Pour in the vanilla portion of batter into one of the three prepared pans.  Next, add the pink  food coloring and strawberry extract (2 teaspoons) into the second portion and pour into the second prepared pan.  Last, mix 1 Tablespoon instant coffee into the last portion of batter and pour into the third pan.

Bake in 350 preheated oven for 24-26 minutes.  Test with a toothpick for doneness.  Remove from oven and cool for 10 minutes before moving to a bakers rack.

Frost with your favorite icing recipe.
