Serena’s Chicken Alfredo Sweet Salsa Blend


 



Ingredients

3 cloves of garlic (reserve one clove for cooking with chicken)

2 sticks butter

2 (8 oz.)  Pkgs of Soft Cream Cheese

1 cup milk

1 1/2 cup Parmesan cheese + extra for sprinkling

2 large chicken breasts (thawed)

Tad Extra Virgin Olive Oil

Penne Pasta (whole box)

1/3 to a half of a cup of shredded mozarella cheese

black pepper

salt

parsley flakes

2 tbsp chunky sweet salsa ( I used my homemade canned salsa recipe is on this website under Serena’s Salsa)

DIRECTIONS

Boil  box of Penne Pasta in lightly salted water with a tbsp of oil till aldente.

Chunk Chicken and put in pan over med low heat with a tad of olive oil.. cook and when chicken is almost done add 1 clove of minced garlic .. stir add black pepper, salt and a few parsley flakes.

Take 2 sticks of  butter and two cloves of minced garlic and put in sauce pan over med low heat.. (hadn’t added the other stick of butter yet lol….. forgot to take some pics)

stir careful not to let garlic burn.  Add in the two  cream cheeses.. stir well will be creamy… add in parmesan cheese and milk.. may need to use wisk to get it free from lumps. Add a tiny shake of pepper and parsley flakes.

Take pasta and drain off all water DO NOT RINSE… add chicken to the pasta and some more parsley.. a little parmesan cheese

and 1/3 to 1/2 of a cup of shredded mozarella cheese.. (I didn’t measure just eyeball it) toss.. will look totally yummy already at this point…

Now take about 2-3 Tbsp of your chunky sweet but flavorful salsa and toss in with the penne..

in all seriousness at this point you could stop and just eat it as is.. so good.. BUT we are going a step further and making it even better..

Pour all your Alfredo sauce over top and toss…

Serve it up hot…DELICIOSO !!!!

you can also set a jar of the sweet salsa on the table, and let your guests add more if desired.. very good!
