this is a recipe I got from a Jello handout.. it was original with regular Jello and Pudding but husband is a diabetic and I used sugar free and went with Sugar free Cool Whip. He loved it.
Mini Lemon Cream “pies”
1 pkg. Jello sugar free Vanilla flavor instant pudding
1 Pkg. Jello sugar free lemon flavor
1-1/2 cups boiling water
8 Vanilla wafers. ( there are some sugar free but I went with the real stuff)
1/2 cup thawed Cool Whip Sugar Free
Mix pudding mix with jello mix in medium bowl. Add boiling water: stir 2 minutes until mixes are completely dissolved. Refridgerate 15 minutes.
Place 1 wafer in bottom of each 8 dessert dishes.( I used a big bowl and just added 8 cookies in the bottom. ) Cover with pudding mixture and top with Cool Whip.

I tried with Sugar Free orange jello and it wasnt as good. And actually it is good with out the cookies too.
