1 pound green beans

2 cloves garlic, minced

1/2 pound ground pork

2 garlic cloves, minced

1 Tablespoon ginger, chopped

2 scallions (spring onions, green onions), white parts only, finely chopped

1/2 teaspoon chili paste

1 Tablespoon dark soy sauce

1/2 teaspoon sugar

1/4 teaspoon salt, or to taste

Pepper to taste, optional

2 Tablespoons vegetable or peanut oil for stir-frying, or as needed 

Directions: 

Heat oil in a large frying pan or wok and cook ground pork. 

When pork is almost done, add garlic and green beans. Continue to stir fry until the skin of the green beans starts to slightly “pucker” and start to brown. This makes them more tender and less crunchy. 

Add remaining ingredients and continue to stir fry until all are heated together. And sauce coats the green beans and pork. 

Serves 4.
