Question Posted By Rina Castillo Trochman
I am looking for a whipped icing. I need a very light and low sugar but yet flavorful icing. My family hates things with too much sugar in it. Any ideas? I like the 7 minute frosting but wanted something new. Thanks 🙂

Answer – Rosetta Sperring Rina, I make a blueberry cake that has a really good icing, and it’s not too sweet. It’s really creamy and not too awfully sweet. You can use low fat cool whip, low fat cream cheese, and a sugar substitute instead of the granulated sugar. Even though this icing may sound sweet, it’s a very creamy icing and not too sweet. http://rosettassweettreats.wordpress.com/2011/05/22/blueberry-cake/ Another icing recipe that’s not too awfully sweet is a marshmellow fluff icing. http://rosettassweettreats.wordpress.com/2011/10/27/marshmallow-fluff-frosting/ Good luck finding the perfect one. I also like the 7 minute frosting, but sometimes the same ol’ same ol gets old, even when it’s a great icing.

Answer-Barb Burkett A favourite icing we use is 1 small box vanilla instant pudding, 1 small container of whipping cream, and 1/2 the required milk for the pudding. Mix it all together until stiff (or fairly still). Will ice a 9 x 13 in cake. Not too sweet at all.
