Ok, so this is my NON Traditional Cannoli Filling

if you want the traditional  which is great too.. just type in the search bar “Traditional Cannoli Filling” I have it posted as well. Both are great. The plus for this one is you don’t have to wait so long for the ricotta to “dry out” because you are using  some Cream Cheese in this recipe to thicken it up.. (cream cheese is NEVER in the traditional Cannoli’s.  Mascarpone Cheese maybe, but Never Cream Cheese.

BUT…. in MY recipe .. I am using Cream Cheese.. LOL .. For one reason simply.. it is delicious!!!!!

Now I used  1 3/4 cup ricotta whole milk Cheese, that had been drained in sieve for 2 1/2 hours..

1 8 oz block Softened Cream Cheese

1 tsp Vanilla

1 cup or more of Powdered Sugar (mix 1/3 of a cup at a time)

1/8 tsp Nutmeg

1/2 tsp Cinnamon

1/2 cup  Dark Chocolate Shavings or chips

Chopped pieces of Orange Citron candy (Optional)

Mix up well

put in pastry bag,

and pipe into each end of cannoli shell just before eating.. and sprinkle with confectionary sugar

put  rest in fridge with lid until ready to pipe into shell..

also if your chocolate chunks are large, be careful your hole is big enough in pastry bag or it will get clogged with chocolate pieces.

Take out of fridge and Fill shells when ready and enjoy
