1-1 POUND SALMON (I usually use 1 can black top salmon)

1- 8 OUNCE PACKAGE CREAM CHEESE(SOFTENED)

1 TABLESPOON LEMON JUICE

2 TEASPOONS GRATED ONION

1 TEASPOON PREPARED HORSERADISH

1/4 TEASPOON SALT

1/4 TEASPOON LIQUID SMOKE

1/2 CUP CHOPPED PECANS

3 TABLESPOONS CHOPPED PARSLEY

 

DRAIN AND FLAKE SALMON, REMOVING SKIN AND BONES

COMBINE SALMON AND NEXT 6 INGREDIENTS…..MIX WELL

CHILL SEVERAL HOURS

SHAPE SALMON MIXTURE IN A 8X2 INCH LOG

ROLL IN CHOPPED NUT AND PARSLEY MIXTURE

CHILL WELL

SERVE WITH CRACKERS

This recipe is always a hit at parties. Make sure you use fresh parsley when mixing the parsley and chopped pecans. You can shape the salmon into a log or shape it into a ring. Anyway you shape it, it’s really good!
