1 29 oz. Can Libby’s 100% Pure Pumpkin

3 C. All Purpose Flour

2 C. Sugar

1 Teas. Baking Soda

2 Teas. Baking Powder

3 Teas. Cinnamon

1 Teas. Salt

4 Eggs

1 1/2 C. Oil

3 C. Chopped Walnuts

 

Preheat oven 350 degrees. Mix together Pumpkin, oil, and eggs. In separate bowl mix together flour, sugar, soda, baking powder, salt and cinnamon. Slowly add dry ingredients to wet ingredients. Mix thoroughly. Add 1 1/2 C. chopped walnuts and mix well. Grease and flour 2 9×5 bread pans. Pour mixture into pans and bake 50-60 minutes. Insert toothpick into center to test when done. Cool loaves before icing.

 

Cream Cheese Icing

 

8 oz. Cream Cheese

16 oz. Confectioners sugar

1/2 C. Butter

1 Teas. Vanilla Extract

 

Mix together softened cream cheese and softened butter. Slowly add sugar and blend well. Add vanilla and beat to a smooth consistency. Spread over bread and use remaining 1/2 C. nuts on top of icing
