PORK SAUSAGE AND POTATO CASSEROLE
1 lb. roll pork sausage
1 tbsp. water
4 potatoes, peeled and diced
1/4 tsp. pepper
1 tsp. salt
2 tbsp. pork sausage drippings
4 onions, sliced
1/4 c. flour
2 c. milk, scalded
1/4 c. fine buttered bread crumbs

 

Slice pork sausage roll into 8 slices; remove plastic covering, place sausage slices in a 9 or 10 inch skillet; add water, cover and cook on medium for about 5 minutes; uncover turn and cook another 5 minutes on second side. Place one half of the potatoes in a 2 quart buttered casserole; sprinkle with half of the seasonings, then half of the pork drippings, then half of the sausage slices, then half of the onions. Sprinkle with half of the flour. Repeat. Pour hot milk over all and top with bread crumbs. Bake at 350 degrees covered lightly with a single sheet of foil for 1 hour; uncover and cook for another 30 minutes. Serves 4.
