4 ears of corn in husks (remove silk and rewrap)

1/4 cup mayo

1 tsp lime juice

1/8 tsp cayenne pepper

3/4 cup crumbled feta cheese 

Soak corn in husks in cold water in a large pan for 10 minutes; drain. Place the corn on grill rack set 5 to 6 inches above heat source. Grill for 10 minutes or until the husks are charred. Pull back husks, exposing kernals and return to the grill rack. Grill for 10 minutes or until kernals are brown in spots. 

Whisk the mayo, lime juice, and cayenne pepper in a small bowl. Brush over hot corn & sprinkle w/ Feta cheese. 

 

You can also subsitute Tastefully Simple’s Spinach and Herb Dip Mix for the lime and cayenne.
