2 slices pumpernickel or rye bread

2 tablespoons Russian dressing

1/4 cup well-drained, fresh-style sauerkraut

3 slices thinly sliced Gruyère or Swiss Cheese

…4 slices of leftover Turkey

Create your own Russian dressing (makes 1/2 cup)

1/3 cup mayonnaise

1 1/2 tablespoon ketchup

1 1/2 teaspoons pickled relish

1/2 teaspoon Worcestershire sauce

Salt and freshly ground black pepper, to taste

Preparation

On the dry side of the first slice of bread, spread one tablespoon of the Russian dressing. Then put on the sauerkraut, spreading it evenly. Arrange the cheese in an even layer over the sauerkraut and then do the same with the turkey.

Spread another one tablespoon Russian dressing on the dry side of the second slice of bread and place it, dressing side down, buttered side up, over the pastrami.

Heat your Panini maker or sandwich press. Butter each side of the press.

Place the sandwiches inside, press down and grill until the cheese is melted and the bread is flat and browned, approximately 10 minutes. Serve warm.

Russian Dressing – in a bowl, mix all ingredients to a smooth dressing.
