Pumpkin Ginger Snap Breakfast Parfaits…
1 c pureed pumpkin;
2T fresh ginger,grated;
2 T chia seeds(found in natural food section, could substitute with flax seeds);
1 1/2 tsp pumpkin pie spice;
2 c unsweetened almond milk(can use sweetened if you prefer);
2 T pecans,chopped;
2 T raisins;
4 gluten free, vegan ginger snaps, crumbled
1 Tbsp Molasses
Combine all ingredients except ginger snaps in a large storage container and chill overnight or at least 4 hours
when thoroughly chilled, portion into 4 parfaits or bowls and crumble 1 cookie over top
gluten free, vegan, sugar free
