    “Pork Omelet” (Bak Chnean Nooi in Hokkien literally translated to Meat Fried in Egg)
    – I used 1lb. ground pork, 2 eggs, salted and pepper. Mix well together. Heat 2 tbsp. oil in a large skillet and pour the mixture in. Spread to cover skillet and cook till done. Cut into wedges and turn over to brown top side. Serve with sweet chilli sauce over rice.

    Eggs in Baked Bean Sauce –
    Fry 2-3 eggs (more if you want) till cooked. 1 cup baked beans (more if you wish). 1/4-1/2 cup water, 3 tbsp. ketchup, 1/2 onion cubed, 1 tbsp. soy sauce. Saute onion in oil till soften, add baked beans and water, bring to boil. Season with soy sauce. Add in eggs and cook. Season with salt and pepper to taste.
  • All this is estimation depending on how much you cook. Just add in till it tastes good for you! This was a poor man’s version of western breakfast but they served it with rice for lunch or dinner which has now become a form of “comfort food”.
