RECIPE AND PHOTO SUBMITTED BY Alexandra Lim

Fried Noodles with homemade BBQ pork, shrimps, Chinese mustard greens (you choy) and cabbage – this is how my grandma cooked fried noodles
‎1 pkt yellow fresh noodles (comes in abt 16-oz bag)
8 oz. Chinese BBQ pork (can be bought at Asian store or homemade using boneless country style rib or pork butt – will share recipe for this separately)
1/2 – 1 cup cabbage, cut in half inch strips
1/2 – 1 lb. Chinese mustard greens (called “you-choy” in Asian market – we call them “chye sim” back home)
1/2 – 1 cup shrimps
1-2 tbsp. chopped garlic
2 tbsp. oyster sauce
2 tbsp. hoisin sauce
salt & pepper to taste
2 tsp. chicken stock granules (optional)

Heat 3 tbsp. oil and saute chopped garlic till slightly fragrant, add shrimps. I usually sprinkle some salt and pepper on the shrimps at this point. Cook for a few minutes till shrimps are slightly pink, add the sliced BBQ pork, then the vegies. Stir till vegies are slightly done, add seasoning. There should be water from the vegies being cooked down. If not, add a few tablespoons of water and simmer for a few minutes.
Add noodles that have been blanched in boiling water and drained. Stir fry for 5 minutes till liquid is absorbed. Add salt and pepper to taste.
Note: above is a “guess-timation” for the ingredients. I usually like a lot of ingredients so my noodles tend to have more ingredients then noodles! LOL

if you can’t get the chinese mustard green, you can omit it, just use more cabbage and add some beansprouts if you like
