I wanted to share with you my favorite spaghetti recipe. I am a nutrtion teacher and always try to find clever ways to get children to eat more veggies. They gobble this up. It is awesome. Please try it 🙂

Very Veggie and Meat Spaghetti
1 lb ground turkey
1 teaspoon olive oil
1 box whole wheat pasta
2 cups chicken stock (low sodium/low fat)
1 tablespoon Italian seasoning
½ teaspoon cayenne pepper
2 cans diced tomatoes
4 cans tomato sauce
3 cups mixed vegetables(any assortment, I always love to add squash or zucchini if avaliable, if adding them make it 4 cups of mixed veggies)
1 cup spinach and cabbage
1 onion
1 bell pepper
3 garlic cloves
1 small eggplant or squash(butternut is great or acorn)
Salt and pepper to taste

Directions:
Brown and drain meat and add olive oil. Put all the above vegetables in a food processor or blender and then add them to a large pot with the meat. Add the noodles and stock. When noodles soften add spaghetti sauce and seasoning along with vegetables. Serve with a salad and garlic bread.
