Sugar Baby Bacon-Glazed Chicken

(I always buy a bag of frozen boneless skinless chicken breasts let them thaw in the fridge over night and cut them into strips when thawed but if your only cooking for a few people you can just reduce the recipe for your group size )

  • Chicken breasts sliced into strips
  • 1 lb hickory smoked bacon
  • Olive oil
  • parsley flakes
  • 4 cloves garlic minced
  • Black pepper
  • soul seasoning
  • Dash salt
  • Just a bit of chili powder
  • Brown sugar

I like to use a heavy baking dish for this

Le Cruset is perfect for this

First cut chicken into meaty strips and place in mixing bowl

add in a little extra virgin olive oil and all spices , mix by hand , brown sugar will be last to go in

next have s little brown sugar in a plate set to the side

and have your baking dish brushed with extra virgin olive oil lightly

now wrap your chicken strips with bacon slices  and roll in the brown sugar on plate then place in the baking dish until all chicken is wrapped


Take remaining spices that is in your bowl and pour over top chicken..

even use the brown sugar in the plate to sprinkle on top and place in 400 degree oven

bake one hour

take out and carefully drain off into sink all the liquid broth that has accumulated

sprinkle top lightly with brown sugar

Place  back into the oven under broil 

watch carefully but let broil until the bacon caramelizes.

take out and barely sprinkle salt, let set a minute

serve with fries and Mac and cheese or with potato pirogies and bbq maple baked beans
