Easy crock pot sting bean salad.
Fresh string beans, cleaned and cut, about ten small potatoes, washed and sliced in four parts. Into the crock pot they went, I added pepper, and a half a package of Good Seasons, and a teaspoon of turmeric. I put the crock on high, and added two cups of ice ( I thought it would melt slower, and steam the veggies) I took six eggs and hard boiled them. I think I could have added them to the crock pot, but was only planning on cooking for a few hours.
Let them cook, app. Three hours or so.
Took the beans and potatoes out, in a bowl sliced red onion, added the hot beans and potatoes. Tossed with oil and vinegar. Then sliced up the eggs, and I added cucumbers to my plate, my family didn’t think it went…whatever! So good and it was such a hot night. If I had them, I could have added black pitted olives.
Season to your taste. I try not to use salt, the dressing is salty enough.
