SHRIMP SCAMPI PARMIGIANA 

 

boil thin spaghetti or linguine noodles in salted water

You should have a large bag of Shrimp deveined and tail off

Normally for this dish you would use large Shrimp but I didn’t have any on hand I just used what I had in the freezer

I rinse my frozen shrimp in cold water and put in a strainer to partially thaw as I get my ingredients out .

you will need white wine about a 1/2 cup I didn’t measure because I add some and a little more later if needed (can use chicken broth if desire in place)

I use a whole bulb of minced garlic 🧄

(remember I am making a lot of pasta if your doing a small amount you will reduce this recipe)

I then add my minced garlic to my pan and add a little extra virgin olive oil

add a whole stick of butter

and cook for a minutes stirring not to burn garlic and add in your shrimp

you will add your wine and red pepper flakes, a nice pinch but not too much I’d you don’t like some heat.

add in a good amount of parsley chopped fresher or flakes

add in some Seas Salt

ans some black pepper

Add in some Parmesan Cheese

stir as the wine reduces and taste you may need some more wine

I then add in my freshly cooked pasta

Before stirring in the hot pasta, I add more Parmesan cheese over it a little more parsley and a melted stick of butter

and a cup of the pasta water in your scampi

then stir it in turn down heat mid your shrimp overcooks it is rubbery

so that’s why it’s best to get out frozen shrimp and partially thaw for this dish

 

End it with a squeeze of lemon I didn’t have any at moms on hand so I used an orange for the acid

was beautiful and delicious still

don’t be afraid to adapt to change when the need arises ❤️
enjoy with crusty garlic bread to sop up the yummy flavors and don’t get this on a hot date
