Serena’s Strawberry Jello Cake with Coconut Cream Icing


 

1 large box Strawberry Jello

1 can Fruit Cocktail

1 yellow cake mix (or homemade yellow cake) 9×13 make as directed

 

Serena’s Coconut Cream Icing

1 can cream of coconut (found in mixed drink isle)

1 stick butter

1 (8oz.) pkg cream cheese

powdered sugar (did not measure, maybe 3-4 cups)

 

 

First Layer

Drain can of fruit cocktail, save juice

pour fruit  cocktail into 9×13 glass dish

Now add two cups boiling water to mixing bowl and add in strawberry jello


mix for 2 minutes..

pour the reserved juice from the fruit cocktail into a measuring cup, add cold water to finish measuring for the jello (1 cup)

pour into jello and mix for 2 minutes

Pour mixed jello over top of fruit and put in fridge till firm

 

Second layer

Make a 9×13 yellow cake of your choice.. homemade or box mix doesn’t matter, spray pan with bakers joy bake and cool completely

after jello has set up completely, pop cake out of pan and place over top of jello

Third Layer

In mixing bowl add 1 stick butter, and 1 block cream cheese

mix together till smooth

Next add in 1 can of cream of coconut

and about 4 cups of confectionary sugar (didn’t measure sorry, if you get it too thick you can add a tbsp of milk)


spread your thick coconut  icing over top with rubber spatula

 

Topping

Toast shredded sweetened coconut on cookie sheet in oven under broiler, watch closely.. when starts to brown stir a little then take out when crunchy but not burnt… let cool completely

take some toasted coconut and sprinkle over top for a nice crunch..

 

put into fridge until ready to serve
