Peppermint bark is a Christmas classic. I make the classic, (posted on this website) as well as this Peppermint – Mint Bark that is a Christmas Hit.. It’s easy and you can make it beautifully in a pinch,  bark makes a wonderful holiday gift.If you don’t have the time or inclination to temper your chocolate, you can either use candy coating, or use untempered chocolate.
SERENA’S PEPPERMINT -MINT CHRISTMAS BARK

  • a little bit of  crushed peppermint candy canes
  • 12 cubes of chocolate bark
  • 12 cubes of white chocolate bark
  • a few chocolate chips
  • a  few mint chips
  • green food coloring and a toothpick
  • cookie sheet and aluminum foil

Unwrap the candy canes and place them in a good food processor if you have one and Pulse on/off several times for 5-10 seconds each, until the canes have been crushed into small pieces.  I just put them in a ziplock baggie and put towel over them and crushed them with a wooden mallet ( 12 candy canes should make one whole cup)

Prepare a cookie sheet by covering it with smooth aluminum foil.

 

Start melting  or temper the dark chocolate  first in a double broiler.. I make my own double broiler by using a  glass mixing bowl that fits nicely on top of a sauce pan , fill the bottom of the sauce pan with some water not too full… put bowl over top and turn on heat.. stir chocolate as it melts.. keep adding chocolate till all is melted.. Then once you get the chocolate started , start up the white chocolate in another broiler ..

VERY CAREFULLY Pour the chocolate onto the prepared cookie sheet and use an rubber  spatula to  spread it to an even thickness, a little more than 1/8″ thick.  also rubber spatula will get every drop of chocolate out of bowl..

 

 

The chocolate does not have to reach all sides of the sheet, as it will be broken up later anyhow. Place the tray in the freezer  to firm up while you prepare the white chocolate.

Now you can start adding some mint chips to your white chocolate

stir them in till melted then take a toothpick that has been dipped in green food coloring and stir into the chocolate.. you just want a mint green.. not too dark..

 

 

Remove the tray from the freezer and spread the mint chocolate in an even layer over the dark chocolate. While the white chocolate is still wet, sprinkle  with some chocolate chips and mint chips randomly over the top.. then top off with the bits of crushed and choppy candy cane pieces over the entire surface evenly.

Place the tray back in the refrigerator to firm up

take out of freezer only when very hard… then you will have to break some of it I broke using my hands the rest I took a knife and pushed down and it would break/crack in the center of the piece I was trying to break smaller…

turned out beautifully..

leave out on counter at room temp and enjoy in covered container or put in plastic containers and freeze until Christmas.. can even give as gifts.. very very tasty

For a more classic look  do the regular white and dark with peppermint like pictured below OR for kids a festive look by just adding  sixlets candy for red and green pop
