Salty Sweet Dark Chocolate Brownies…

1 c semi-sweet chocolate chips,

1/4 c dark chocolate chips(you can use all semi-sweet if you prefer),

1 c softened unsalted butter,

4 large eggs,

1 c coconut palm sugar(or brown sugar),

6 T Hershey’s Special Dark cocoa powder(or regular if you prefer),

2 T cornstarch,

1/2 tsp salt,

1 tsp instant coffee,

2 tsp pure vanilla extract,

1 1/2 c salted, dry roasted peanuts, chopped….

Preheat oven to 375 degrees..

Spray a 9 by 12 baking dish with non stick spray and set aside..combine chocolate chips and butter in food processor and pulse several times to roughly combine..

Add remaining ingredients and blend until combined, batter will be lumpy..

Spread mixture into pan evenly.. Too with chopped nuts and press into batter slightly..bake for 20 minutes or until set.. Cool and cut into squares..

Makes 24 brownies…

Gluten free, but certainly not low calorie or low fat..278 calories per brownie, 6.5 g fat, 13 g carbs with 2 g fiber.. 6 points per brownie on weight watchers..
