Red Beans cooked with smoked hamhocks over Rice and some green onions on top. A slice of cornbread on the side.

Really not a big recipe. I boiled hamhocks for about an hour and then added soaked red beans to it. I soak my beans for about 15 min in. Hot water and then rinse and then soak forabout another hour, rinsing until my water is clear. Added to hamhocks on top of stove with almost full pot of water and cooked until water was almost cooked 1/2 way out. Put in crockpot and cooked 2-3 hours on high and then turned to medium adding a little salt and pepper. Cooked some rice on side and the cornbread. Chopped green onions on top and good eating. I did see where some use sausage for their seasoning meat. It sounds good so I might try it next time.
